Noodles With Chicken and Fresh Black Beans
Preparation time: 15 minutes
Total cooking time: 15 minutes
Serves 2-3
Ingredients:
2 teaspoons salted black beans oil, for cooking
2 teaspoons sesame oil
500g (1lb) chicken thigh fillets, cut into strips
3 cloves garlic, sliced
4 spring onions, chopped 1 teaspoon sugar
1 red capsicum, sliced
100g (3 1/2 oz.) green beans, cut into short pieces
300g (10 oz.) Hokkien noodles
2 tablespoons oyster sauce
1 tablespoon soy sauce
Directions:
1. Rinse all the black beans in a running water and drain them and roughly chop them.
2. Heat the wok until it becomes hot, add 1 tablespoon of the oil and the sesame oil and swirl it all around to coat the side. Then stir-fry all the chicken in three small batches, until it becomes browned, in the mean time tossing regularly and remove from the wok and set aside.
3. Then reheat the wok, add 1 tablespoon of oil and stir-fry the garlic and the spring onion for about 1 minute. Add the black beans, the sugar, the capsicum and the beans, and cook for about 1 minute or so. Sprinkle with 2 tablespoons of water, cover it and steam for about 2 minutes.
4. Gently separate the noodles and add to the wok with the chicken, the oyster sauce and the soy sauce, and toss it well. Cook, covered, for about 2 minutes or so, or until the noodles become just softened.
